The annual CIFIT, which is held in Xiamen during Sept. 8-11, has attracted merchants and tourists from all over the world, drawing together like clouds. Xiamen’s local snacks have been more keenly sought after by them than ever.

As for Ms. Cao, a cashier at Huang Zehe peanut soup shop, a popular local snack shop on Zhongshan Road, she has become busier than ever as the number of customers to taste the peanut soup is surging.

“Every year during the CIFIT, foreign guests and tourists from across the country are attracted here to taste our peanut soup,” said Ms. Huang Xiuqing, general manager of the shop.

“Sometimes it gets so crowded that guests have to line up for a long time,” she added. Once several guests who came just before the shop closed, said they were admiring the fame of the soup, and since they had already come to Xiamen, it would be a pity not to try this famous local snack.

Mr. Yu Zhipeng, general manager of the Hao Qingxiang Foods Centre which is located on Hubin Nan Road, said the number of guests has doubled before and during the CIFIT.

According to a street survey, Oyster Omelette, Tusun Jelly, Shacha Noodle, Gluey Noodle and Peanut Soup are very popular with guests. Particularly, the Oyster Omelette and Tusun Jelly are the most favorite local snacks among tourists.

“Tusun Jelly is indeed well-known but many guests do not know exactly what it looks like,” said Mr. Yu Zhipeng, “some guests would be ‘stunned’ when they first saw it, thinking it was made of worms, but still, they would be on their mettle to taste it.”

Tusun Jelly's main material is a kind of worm found in muddy seabed. It contains gelatin, after cooking the gelatin is mixed with the water, and form to jelly after getting cold.

It is a place to taste local dishes but if only they would request in upgrading the restaurant in order safely satisfies guest and don't get me wrong majority of people who try to taste in that restaurant are "overseas Chinese" who have an idea and can tolerate unclean restaurant but of course how about the many non-Chinese who of course would want to taste but environment must be clean like anybody says cleanliness is next to godliness. You see the look it is like a restroom with a white tiles around the wall similar to every WC in

China so who ever wants to eat in a diner looking like that....
