Singapore Seafood Festival. The festival will last till 11th June.

On 4th June, the Singapore Seafood Festival kicked off at Harbour Café of Millennium Harbourview Hotel Xiamen. The festival will last till 11th June. The huge selection of cuisines to please all the fussy dinners can be found in the buffet style dining setting, dominated by Singaporean hawkers’ food.
 
The Singapore seafood cuisine is well prepared by an authentic Singaporean chef. Singaporean food lovers can from now till the end of week (Friday is the last day) enjoy an authentic Singaporean cuisine at the Harbour Café which is certain to provide incredible dining experience.
 
Singapore cuisine was often described as parts Chinese, Malay and Indian. This is somewhat true, yet certain dishes are now distinctly Singaporean in character, and far different from their original cuisine. 
 
Deriving from the rich culinary traditions of each community’s ancestral lands with flavors that are often robust, it is natural to follow that the food of Singapore is extremely flavorsome, frequently spicy, and consist regularly of a mix of Chinese condiments, with Indian spices and Malays ingredients of tropical herbs and fruits of chilies, coconut, lemongrass, galangal and the like. 
 
Mee Goreng (or fried noodles), Sambal Prawn (or Sambal Udang) and Fish Head Curry are some of the popular dishes in Singapore and they are served at the Singapore Food Festival.
 
1). Prawn Sambal

Sambal Udang or prawn sambal is a very popular Singaporean dish. A Malay style sambal. fresh chilis are pounded together with toasted shrimp paste in a stone mortar to which sugar and lime juice are added.  The Singaporean-Chinese version is to fry big prawns with shrimp paste and chili.
 
This dish is best served with steamed rice, which is what Harbour Café provides in their buffet style setting.
 
2).Curry Fish Head

Curry Fish Head  is a dish where the head of an Ikan Merah (literally "Red fish" usually red snapper), is semi-stewed in a thick curry with assorted vegetables and usually served with either rice or bread. Mixing the spices of a typical South Indian fish curry with the fish head, the dish is a popular delicacy in Singapore.
