Savory tea-flavored dishes at Fu Gong at Shangri-La Hotel, Xiamen

A great way to celebrate the arrival of spring is to sip on a cup of soothing Chinese tea while snacking on a few seasonal spring delicacies. Tea is not only a drink: tea leaves are featured in a variety of delicious Chinese dishes.?
 
Spring-harvest tea is the best for use in cooking. Spring tea leaves are usually softer and smoother on the palate, and contain nutrients absorbed over the long winter. Spring cuisine features not only tea, but also fresh spring bamboo shoots, which are wonderfully tender and sweet.

 

 

This spring, 30 Shangri-La hotels throughout China will be offering special culinary creations inspired by spring. The new offerings were created in cooperation with the famous Chinese gourmand, Mr. Shen Hongfei, and the dishes will be available starting from March 26th. Shangri-La Hotel, Xiamen will also be taking part; the hotel will be offering a variety of dishes containing spring tea and bamboo shoots, including the following:

 

 

Wok-Fried Prawn with Da Hong Pao

- Tea pairing: Da Hong Pao

 

From Wuyi Mountain, Da Hong Pao Tea was called as the “King of Tea” in the Qing dynasty. Fresh sea prawns are marinated in Da Hong Pao Tea soup to give them a special tea flavour of Da Hong Pao. The marinated prawns are then fried with Da Hong Pao Tea leaves. When the dish is ready, the dish is infused with a tea scent, and has the fresh taste of both the tea and prawn.

 

 

Roasted Pigeon with Tea

- Tea pairing: Anxi Tie Guanyin

 

Tie Guanyin Tea is one of the most famous Chinese Oolong Teas. Chef Tony Lam, the Chinese executive chef of Shangri-La Hotel, Xiamen, crafted a special marinade using Tie Guanyin Tea. The marinated pigeon is smoked in the traditional way. The pigeon is especially tasty and juicy, with a light tea flavour.
