Pier 38's lavish buffet at Theatre Kitchen in Conrad Xiamen

Today, restaurants are not just places to eat; they are venues for socializing and staying connected to the world. Conrad Xiamen believes that the process of dining in a restaurant can be as enjoyable as going to a theater: kitchen as playhouse, chef as director, ingredients as actors, the process of cooking as plot, and the mix of food and tableware as stage design. The hotel has developed this idea into a novel dining concept  “theatre kitchen.”

 

 

 

Mr. Nelson Ong (王子文), executive chef at Conrad Xiamen, introduced the “theatre kitchen” concept at Conrad Xiamen’s all-day-dining establishment, Pier 38. Hailing from Malaysia, Master Nelson Ong has more than 20 years of experience in the cooking and management of top-level luxury hotels. He was the head chef of many famous hotels in Kuala Lumpur, Singapore, Sanya, Chengdu, Dalian, and other cities. Before he became Conrad Xiamen’s executive chef, he served as executive chef of St. Regis Chengdu. During his tenures at those many restaurants and hotels, he proved his artistic, imaginative approach to cooking.
 

 

 

Chef Ong’s experience working as an apprentice to a three-star Michelin chef in Singapore deeply affected him. Chef Ong often remarks that "the best ingredients are sourced locally." With his avant-garde cooking style, he is able to apply international cooking techniques such as those from France and Italy to local ingredients to create unique new dishes that reflect the traditions of local diners while also creating new, original delights. Chef Ong attaches great importance to the quality of ingredients, and he pays close attention to coming up with creative dishes in combination with local specialties.
 

 
 

Every time Chef Ong visits a new place, he familiarizes himself with the region, learns about the local cuisine, and immerses himself in the local culture. Xiamen's famous Bashi (八市) is a place that he visits frequently. After coming to Xiamen, he recreated the famous southern Fujian oyster omelette in a new dish, the “French-style oyster omelette.” The new cooking method preserves the freshness and tenderness of the oyster while honoring the traditional style of the region.

Lavish seasonal buffet: The new lavish buffet at Pier 38 opened on June 14th. The buffet is offering nearly 100 delicacies and 12 stalls, including a southern Fujianese local food stall, a Cantonese roasted meat stall, a Japanese teppanyaki and sushi stall, a barbecue stall, and a chef's recommended dessert stall.
 

 

 

All-you-can-eat sea urchins: The seafood stall is now richer than ever before in fresh seafood varieties. The stall offers new products such as sea urchins, crayfish, Alaskan crab legs, and babylonia areolata (花螺). It also retains traditional seafoods including scallops, mussels, conch, and shrimp.
 

 
 
 
 

Daily "Head Chef Private Kitc: Special cooking methods, such as molecular cuisine and slow cooking, which can usually be seen only at Michelin restaurants, now appear at the chef's table at Pier 38 at Conrad Xiamen. Chef Ong now offers a daily chef's menu with four authentic Western-style delicacies such as baked Australian lobster with French vanilla, simmered Hokkaido octopus with tomato thick soup and curry, and French Rougie goose liver with gingerbread, peach jam, diced mango, and apple flake.

 

 

 

Dessert show: Every night at 7 p.m., the waiter shakes a bell as a signal that guests are invited to the dessert cabinet to watch the dessert show.
 
 
Dessert stall: The dessert chef has more than 20 years of experience. A rose strawberry watermelon cake called “First Love” is the star dessert of the Conrad Bakery. The cake’s flavor is sweet and sour, just like the feeling of people experiencing first love.
