Sample Shaanxi snacks in Xiamen

Living in Xiamen, one can taste various special snacks and dishes coming from different regions in China, such as Sichuan dishes, Muslim dishes, and many others. However, have you ever tasted Shaanxi snacks and dishes in Xiamen, which has a long history and are popular with Chinese people?
 
Shaanxi cuisine and snacks are well-known for their variety and full of the north western cuisine features.
 
Liang Pi (凉皮)
 
The most popular and well-known snack of Shananxi snacks is Liang Pi. Literally, Liang Pi means Cold Skin, although it has no animal products in it at all. It is a noodle-like dish made from wheat or rice flour, a specialty dish originating from the Chinese Province of Shaanxi.
 
This dish of cold noodles comes with a sauce that hits every possible flavor category (sweet, tangy, savory, herbal, nutty and dozens of others).
 
Qishan Noodle(岐山面)
 
Qishan Noodle, also called Saozi noodle(臊子面), has a long history which can be dated back to the Qing Dynasty. It is called Qishan Noodle just because it is originated from Qishan County, Shaanxi.
 
These noodles are hand-made noodles of good wheat flour, thin, smooth and soft. Served with sour and chili soup as well as some shredded pork, egg, and black fungus, Qishan Noodle is savory, spicy, sour, and full of nutrition. It is popular with the locals and the visitors. 
 
Rou Jia Mo (肉夹馍)
 
Rou Jia Mo, meaning hot meat sandwich or burger, is a street food widely consumed in China, especially in Shaanxi.
 
An authentic Mo () is made from wheat flour which is made into a batter and stirred repeatedly for an extended period of time and then baked in a clay or mud oven. Depending on the types of spices used to cook the meat and the way the bread is made, the taste of Rou Jia Mo can vary greatly from vendor to vendor and region to region.
 
In Xiamen, there are some recommended restaurants for you to taste authentic Shaanxi snacks and dishes.

They serve authentic northwest Chinese dishes. Their muttons are directly freighted by air from Lanzhou, the capital city of northwest Chinas Gansu Province.
