Popular Sichuan dishes in Xiamen

There are eight cuisines in China: Shandong Cuisine, Sichuan Cuisine, Guangdong Cuisine, Fujian Cuisine, Jiangsu Cuisine, Zhejiang Cuisine, Hunan Cuisine, and Anhui Cuisine. Among these eight, Sichuan Cuisine is one of the favourites for people in Xiamen, both Chinese and expats.
 
In Xiamen, you can find more than a hundred Sichuan restaurants scattered throughout Xiamen. Here are some popular dishes that are usually ordered.
 
Shuizhu Huoyu (Fish Filets in Hot Chili Oil)

This is a relatively new Sichuan Cuisine dish with a history of about twenty years. It was first popular in Sichuan and was introduced to Beijing about 10 years ago. Soon, almost all Sichuan cuisine restaurants in China serve the dish.
 
Shuizhu Huoyu is usually served in a big bowl and topped by a layer of red chilies. The fish meat is  first stir-fried and then stewed with hot and spicy soup. As you begin to taste the dish, waiters will usually take away the red chilies. The sliced fish tastes tender and juicy. And the soup of the dish is salty and hot. You may have to worry more about the tiny chilies rather than the fish bones.
 
Mapu Tofu (Stir-fried tofu in hot sauce)

Mapo Tofu is a popular Chinese dish from Sichuan province and is well-known all over China and even to the world. Tofu (bean curd) is cooked in a spicy chili and bean-based sauce (typically thin, oily, and bright red), and often topped with minced meat, usually pork or beef.
 
It is said that Mapo Tofu was made by a pock-marked but ingenious woman, thus the name Ma Po Tofu (pock-marked woman's bean curd).
 
Kungpao chicken cubes (Spicy diced chicken with peanuts)

In Chinese, it is called Gong Bao Ji Ding. This is a tender chicken dish where the chicken is quickly fried and flavoured with peanuts. The chicken taste a little bit spicy and the peanuts are crispy. It is a popular dish that you can find in many other restaurants besides Sichuan restaurants.
 
Fuqi Feipian (Pork lungs in Chili Sauce)

A popular dish in Chengdu. It got the name because it was only sold by a couple. Nowadays, the Fuqi Feipian mantains the original savor, tender meat and spicy.
